- Heat a frying pan over medium heat.
- Add 1 tbsp coconut oil and swirl to coat the pan.
- Next, add the ground Turkey. Season with a pinch of salt and pepper. Break apart and cook until browned, about 5 minutes.
- Add the diced sweet potatoes, shallots, minced garlic, and bell pepper. Stir to combine.
- Juice the lime into the pan, then cover. Cook for 10 minutes.
- Remove the cover and stir. Add the kale and Gouda cheese. Cook for 10 more minutes.
