  1. Heat a frying pan over medium heat.
  2. Add 1 tbsp coconut oil and swirl to coat the pan.
  3. Next, add the ground Turkey. Season with a pinch of salt and pepper. Break apart and cook until browned, about 5 minutes.
  4. Add the diced sweet potatoes, shallots, minced garlic, and bell pepper. Stir to combine.
  5. Juice the lime into the pan, then cover. Cook for 10 minutes.
  6. Remove the cover and stir. Add the kale and Gouda cheese. Cook for 10 more minutes.
