Heat oil in a large dutch oven over medium-high heat. Cook sausage and break it up. Move sausage to a bowl.
Add more oil. Add onion and pinch of salt. Cook until softened, stirring occasionally.
Stir in garlic and cook for a minute.
Add yams, bell pepper, and a pinch of salt. Cook until slightly softened, stirring occasionally.
Stir in tomato paste and harissa and cook for a couple minutes.
Stir in wine and cook for a couple minutes.
Stir in seasonings.
Add water to desired consistency and bring to a boil. Cover and drop heat to low. Cook for 15 minutes, check consistency. Add water if needed. Once done, let cool for 15 minutes.
