- Prep veggies and sausage. Heat a large dutch oven over medium-high. Add oil. Once hot, saute onion until slightly softened.
- Add pepper and celery, saute until slightly softened. Add garlic, cook for two minutes.
- Add spices and rice. Cook for 3-4 minutes.
- Add broth, bring to boil, reduce heat to medium-low and cover. Cook until liquid is absorbed and rice is tender.
