- salt and pepper meat generously, then brown it
- heat oil, saute onion until translucent, add garlic
- add tomato paste, cook and stir occassionally for 2 minutes. Add any other pastes here.
- add potatoes and carrots and whatever other vegetables, cook and stir for 3 minutes
- add the wine, stir, cook for 5 minutes
- add the stock and seasonings, bring to boil, reduce heat, cover, cook for 20 minutes
- remove lid, stir, cook for another 10 minutes, or until meat is tender and potatoes are cooked.
